4 Fast Recipes

Hello everyone,

Are you also sometimes late, still have appointments or simply do not want to stand for hours in the kitchen? That happens to me more often, but then to order takeout is rarely an option for me. Therefore, here are 4 recipes that are ready in no time. I usually have most of the ingredients at home anyway, and some have even a little longer shelf life, which is why they we can spontaneously use them for a delicious meal.

Scrambled eggs with sausage

Actually, I’m not that crazy about scrambled eggs most of the time, but even in the past, my mom made scrambled eggs with sausage as a way to use up leftovers, like cold cuts or sausage. You can actually add anything. Strangely enough, scrambled eggs taste very good to me when prepared like that. Actually, I have always cooked it without a recipe, and just eyeballed the ingredients; but every time I struggle to remember how many eggs I have used before, so I decided to write it down at some point.

Scrambled Eggs with Sausage

You need
 

  • 1 Large Sausage
  • 10 Eggs
  • Salt, Pepper, Garlic Powder, Onion Powder, Paprika Powder, Parsley, Chives

Here’s how to do it

  • Cut the sausage into small pieces and fry them in a pan.
  • While you fry the sausage, take care of the eggs. Attention: keep an eye on the sausage, it can burn quickly.
  • Put the eggs in a bowl and beat them.
  • Then add the spices. Don't be sparing, but go by your taste. Some like it a bit spicier, others like to eat less salt. However, I would recommend using at least 1 tsp of each spice and 1 tbsp of each herb.
  • Now add the eggs to the sausage and fry everything well. Keep stirring, as you do with scrambled eggs 😀.
  • If necessary, add more seasoning. Serve warm.

Gnocchi with Creamy Mushroom Sauce

I love Gnocchi, whether boiled in water or fried in the pan, home-made or store-bought (you’ll need to add more time for the home-made ones, unless you have some prepared in your freezer). In addition, a delicious sauce with mushrooms, what could be better?

Gnocchi with Creamy Mushroom Sauce

You need
 

  • 800 g Gnocchi
  • 250 g Mushrooms
  • 1 Onion
  • 400 ml Whipping Cream
  • 1 TSP Salt
  • 1/2 TSP Pepper
  • 1/2 TSP Paprika powder
  • 1 TBSP Flour or Cornstarch
  • 1 Bunch Spring Onions
  • Butter

Here’s how to do it

  • First, chop the onion and cut the mushrooms into smaller pieces.
  • Heat some oil in a pot or a deep frying pan and sauté the onion until it is translucent. Then add the mushrooms and keep frying everything.
  • Now add the cream.
  • Next is the seasoning: For this we take salt, pepper and paprika powder – at least 1 tsp per spice.
  • To thicken the sauce, put some flour (or cornstarch) in a glass of cold water, stir it well and add it to the boiling sauce. Alternatively, you can use a sauce thickener.
  • Let it boil until the sauce is creamy.
  • While the sauce is boiling, put some butter in a deep frying pan and fry the gnocchi until golden brown. Be careful: they can burn quickly.
  • Finally, cut the spring onions into small rings and mix them into the sauce.
  • Taste your sauce and season if necessary.
  • Once the gnocchi and sauce are ready, combine to serve.

Rice Stir Fry with Ground Meat

I usually have ground meat in my freezer, and rice is one of the staple items in my kitchen too. Ideal to make a super fast and delicious meal.

You need
 

  • 300 g Rice
  • 400 g Ground Meat
  • 2 Onions
  • 3-4 Tomatoes
  • Vegetable Oil
  • Salt, Pepper, Parsley, Chives

Here’s how to do it

  • Cook the rice in salted water. Either in a rice stove or a pot.
  • Fry the ground meat in a deep pan and season with salt and pepper.
  • Now wash your tomatoes and cut them into small pieces.
  • Combine rice and meat, and then add some parsley and chives and mix well.

Pasta with Tomato Sauce

A classic that almost everyone likes, that is super quick to make with ingredients you usually have at home. For me, this is usually the case when I postpone the grocery shopping by a day or two. Then we’re usually like, “Well, let’s have pasta then. Do we want pesto or tomato sauce?”. We often decide on tomato sauce.

You need
 

  • 500 g pasta
  • 400 g Crushed Tomatoes
  • 1 Onion
  • 1 clove Garlic
  • Vegetable Oil
  • salt, Pepper, Italian Herbs, Basil, Thyme

Here’s how to do it

  • First, cook the pasta in salted water.
  • In the meantime, chop the onion and garlic, put them in a pot with some oil, and fry them.
  • Now add the tomato paste, stir well.
  • Then add the crushed tomatoes. If you like, you can also use chunky tomatoes.
  • For the seasoning, I use at least 1 tsp of each spice, of the herbs a little more. It's best to taste again and again and season according to your taste.
  • Once the pasta is ready, the meal can be served.
