Apple Cinnamon Oatmeal Muffins

My Oatmeal Muffins are a great snack to take to work. Using applesauce does not only give you the possibility to replace eggs when baking, but also adds valuable vitamins. The oatmeal is very filling and gives you the energy to start the day well.

You need
 

  • 300 g Applesauce
  • 120 g Oats also available gluten-free
  • 50 g Soy Flour
  • 50 g Corn Flour
  • 30 g Raisins
  • 1 pinch Cinnamon
  • 1 TBSP Baking Powder
  • 50 g Ground Almonds
  • 2 TBSP Agave Syrup

Here’s how to do it

  • Preheat oven to 180 °C.
  • Mix all ingredients in a large bowl.
  • Divide dough along 8 muffin tins.
  • Bake muffins in oven for about 15-20 minutes.
  • Cool & enjoy!
