Apple Muffins

Since I bought a muffin tin and the breakfast muffins worked so well, I have actually tried baking a few times. Although I like chocolate desserts best, I like to have a fruity one every now and then. These muffins are easy to make and definitely suitable for baking beginners. In case you wonder why the baking powder is missing: I simply forgot it, but the muffins turned out great anyway 😉

You need

  • 450 g Flour
  • 180 g Sugar
  • 200 ml Oil
  • 200 ml Water
  • 3 Eggs
  • 400 ml Whipping Cream
  • 4 TBSP Greek Yogurt
  • 2 TBSP Sour Cream
  • 2 TBSP Vanilla Extract
  • 2 Apples
  • 400 g Apple Sauce

Here’s how to do it

  • First preheat the oven to 200°C. Then mix the ingredients for the dough in a large bowl to a smooth mixture, fill into the muffin tins and bake for about 20-25 minutes.
  • In the meantime, prepare the topping. Whip the cream and mix with the yogurt, sour cream and vanilla extract.
  • Wash the apples and cut or grate them into very small, thin pieces and add them to the cream mixture.
  • After taking the muffins out of the oven, let them cool down briefly, then spread the apple sauce on top first, followed by the cream mixture.
  • Before serving, refrigerate your muffins for at least 2 hours.
