Basil Pesto
According to Wikipedia the word pesto comes from pestare, which means “to crush”. So I unpacked my new mortar to make a nice basil pesto. This version becomes very fruity with a splash of lime juice and can be kept in the fridge for several weeks.

You need
- 50 g Basil Leafs
- 40 g Parmesan Cheese
- 3 TBSP Olive Oil
- Walnuts
- Lime Juice
- Spices: Salt Pepper
Here’s how to do it
- Put basil, grated parmesan, olive oil and some chopped walnuts in a mortar (alternatively: food processor) and crush finely. Keep adding walnuts until the desired consistency is reached.
- Finally, season to taste with salt, pepper and lime juice. Ready!
