Basil Pesto

According to Wikipedia the word pesto comes from pestare, which means “to crush”. So I unpacked my new mortar to make a nice basil pesto. This version becomes very fruity with a splash of lime juice and can be kept in the fridge for several weeks. -Josefine

You need
 

  • 50 g Basil Leafs
  • 40 g Parmesan Cheese
  • 3 TBSP Olive Oil
  • Walnuts
  • Lime Juice
  • Spices: Salt Pepper

Here’s how to do it

  • Put basil, grated parmesan, olive oil and some chopped walnuts in a mortar (alternatively: food processor) and crush finely. Keep adding walnuts until the desired consistency is reached.
  • Finally, season to taste with salt, pepper and lime juice. Ready!
