Breakfast Cookies
When looking for healthy breakfast ideas I ran into breakfast cookies a few times. Given the fact that I love sweet breakfast and like to prepare food even more, I wanted to give it a try. Oats and ground nuts are the main ingredients, the cookies are sweetened with agave syrup and finally refined with a few chocolate drops – delicious!-Natascha

You need
- 50 g Oats
- 50 g Almond Flour
- 45 g Cashews
- 30 g Almonds
- 30 g Peanuts
- 30 g Dark Chocolate Drops
- 2 TBSP Chia Seeds
- 20 g Agavesyrup
- 50 ml Plant-based Milk I used Cashew Milk
- 1 Egg
- 2 TBSP Tahini
- 1 TSP Cinnamn
- 1 TSP Salt
Here’s how to do it
- Preheat the oven to 175°C.
- Next, chop the nuts into small pieces. The best way to do this is to put them in a freezer bag and then crush them with a rolling pin.
- Then place in a large bowl with the rest of the dry ingredients.
- Add the tahini, agave syrup and the egg and mix well.
- The last thing to add is the milk. Depending on the consistency, simply add a little more or less until you have a sticky dough.
- Now form 8 round cookies, place on a baking sheet and bake for about 20 minutes until crisp.
- Allow the cookies to cool and store in a cookie tin.
