Snacks and light lunches are something that I love to try. If it is super easy, needs only a few ingredients and tastes great, the recipe quickly becomes a fixed part of my repertoire and regularly ends up on our plates. This is also how it was with these carrot fritters. Who says fritters always need to be made from potatoes? -Natascha

- 6 Carrots
- 2 Eggs
- Almond Flour optional
Here’s how to do it
- Peel the carrots and grate them finely. Place in a nut milk bag (alternatively, a close-meshed sieve will do) and squeeze out as much liquid as possible.
- Put into a large bowl and mix with the eggs. If the dough is still quite watery, just add a little flour until it becomes a firm consistency.
- Form the fritters with your hands and place them on a baking tray. Bake at 180°C for approx. 30 minutes until the surface is lightly browned and the fritters are nice and crispy.
- They taste best with a yogurt dip, tzatziki or hummus.
