Most of us know that ginger supports the immune system. And carrots are also a great source of vitamins and minerals. Together with potatoes, onions, an apple and some cream cheese, these ingredients make a delicious, creamy soup quickly and easily. Bon appetit!

You need
 

  • 5 Large Carrots
  • 1 Potato
  • 1/2 Tuber Ginger
  • 1 Apple
  • 1 TBSP Cream Cheese
  • Scallions
  • 1 Garlic Clove
  • Chives
  • Salt, Pepper

Here’s how to do it

  • First, peel and dice the carrots, potato and ginger. Put them in a pot together with the apple pieces and the scallion rings and sauté with a little oil.
  • Then fill up with water so that the vegetables are covered and simmer over medium heat for about 20 minutes.
  • Now puree the soup, stir in the cream cheese, add the garlic and chives and season with salt and pepper.
