Carrot-Ginger-Soup
Most of us know that ginger supports the immune system. And carrots are also a great source of vitamins and minerals. Together with potatoes, onions, an apple and some cream cheese, these ingredients make a delicious, creamy soup quickly and easily. Bon appetit!-Natascha

You need
- 5 Large Carrots
- 1 Potato
- 1/2 Tuber Ginger
- 1 Apple
- 1 TBSP Cream Cheese
- Scallions
- 1 Garlic Clove
- Chives
- Salt, Pepper
Here’s how to do it
- First, peel and dice the carrots, potato and ginger. Put them in a pot together with the apple pieces and the scallion rings and sauté with a little oil.
- Then fill up with water so that the vegetables are covered and simmer over medium heat for about 20 minutes.
- Now puree the soup, stir in the cream cheese, add the garlic and chives and season with salt and pepper.
