Carrot-Tomato Sauce
This variation on a classic tomato sauce is perfect for those who love it spicy and creamy. We had farfalle with this; however, I will definitely try this sauce with gnocchi or roasted vegetables. If you can think of any other ways to use it, please leave me a comment 🙂 -Josefine
You need
- 1 Onion
- 12 Mini Carrots
- 1 Yellow Bell Pepper
- 10 Mini Tomatoes
- 1 TBSP Tomato Paste
- 1 Pck. Mozzarella
- 1 Squeeze Lemon Juice
- 1/2 Cup Crème Fraîche
Here’s how to do it
- Cut the onion into small pieces and sauté in a little olive oil until translucent.
- Cut carrots and peppers into fine pieces and sauté with some water. Then cut the tomatoes in half and add.
- Stir in tomato paste.
- Cut mozzarella into small pieces and add as well. If necessary, set aside some mozzarella to garnish before serving.
- Finally, season the sauce with a squeeze of lemon juice, crème fraîche and salt and pepper.
