Carrot-Tomato Sauce

This variation on a classic tomato sauce is perfect for those who love it spicy and creamy. We had farfalle with this; however, I will definitely try this sauce with gnocchi or roasted vegetables. If you can think of any other ways to use it, please leave me a comment 🙂

You need
 

  • 1 Onion
  • 12 Mini Carrots
  • 1 Yellow Bell Pepper
  • 10 Mini Tomatoes
  • 1 TBSP Tomato Paste
  • 1 Pck. Mozzarella
  • 1 Squeeze Lemon Juice
  • 1/2 Cup Crème FraĂ®che

Here’s how to do it

  • Cut the onion into small pieces and sautĂ© in a little olive oil until translucent.
  • Cut carrots and peppers into fine pieces and sautĂ© with some water. Then cut the tomatoes in half and add.
  • Stir in tomato paste.
  • Cut mozzarella into small pieces and add as well. If necessary, set aside some mozzarella to garnish before serving.
  • Finally, season the sauce with a squeeze of lemon juice, crème fraĂ®che and salt and pepper.
