Chicken Salad with arugula
Easy to prepare, either as a main dish or side. The mango makes it super fruity and fresh, while soften the slightly bitter taste of the arugula. Add walnuts for a nice crunch -Josefine
- 80 g Arugula
- 300 g Chicken Breast
- 1 Mango
- 2 Avocados
- A few walnuts
- Olive Oil
Here’s how to do it
- Wash and dry the arugula. Cut the chicken breast into narrow strips and season well with salt and pepper. Fry in a skillet.
- Peel the mango and cut into pieces. Cut the avocado and walnuts as well.
- Mix the arugula, chicken breast, mango, avocado and walnuts in a bowl and season with olive oil, balsamic glaze and balsamic vinegar. Season with salt and pepper.
