Chicken Salad with arugula

Easy to prepare, either as a main dish or side. The mango makes it super fruity and fresh, while soften the slightly bitter taste of the arugula. Add walnuts for a nice crunch

You need
 

  • 80 g Arugula
  • 300 g Chicken Breast
  • 1 Mango
  • 2 Avocados
  • A few walnuts
  • Olive Oil
  • Balsamic
  • Glaze
  • Balsamic
  • Vinegar
  • Salt
  • Pepper

Here’s how to do it

  • Wash and dry the arugula. Cut the chicken breast into narrow strips and season well with salt and pepper. Fry in a skillet.
  • Peel the mango and cut into pieces. Cut the avocado and walnuts as well.
  • Mix the arugula, chicken breast, mango, avocado and walnuts in a bowl and season with olive oil, balsamic glaze and balsamic vinegar. Season with salt and pepper.
