Chocolate Cherry Pie with Zucchini
Currently, we have a lot of zucchini in our garden, so I always think about new ways to use them. My latest attempt was a chocolate cake with cherries. The zucchini and the cherries make the cake nice and juicy. Do you grow your own veggies? How do you use them? -Nicole
You need
- 160 g Sugar
- 4 Eggs
- 100 ml Sunflower Oil
- 300 g Grated Zucchini
- 200 g Flour
- 16 g Baking Powder
- 100 g Ground Hazelnuts
- 30 g Baking Cocoa
- ½ tsp Salt
- 360 g Pitted Cherries (fresh or from the jar)
- a little Powdered Sugar
Here’s how to do it
- First, put the sugar and eggs in a bowl and beat them until fluffy.
- Gradually add the following ingredients. Stir well. (1) Oil and zucchini(2) Flour, baking powder, and hazelnuts(3) Cocoa and salt
- Finally, add the cherries and fold them in.
- Put the dough into a greased cake pan and bake it for about 30 minutes at 170 °C.
- Take the cake out of the pan and let it cool down.
- If you like, sprinkle some powdered sugar on top.
