Chocolate Cherry Pie with Zucchini

Currently, we have a lot of zucchini in our garden, so I always think about new ways to use them. My latest attempt was a chocolate cake with cherries. The zucchini and the cherries make the cake nice and juicy.

You need

  • 160 g Sugar
  • 4 Eggs
  • 100 ml Sunflower Oil
  • 300 g Grated Zucchini
  • 200 g Flour
  • 16 g Baking Powder
  • 100 g Ground Hazelnuts
  • 30 g Baking Cocoa
  • ½ tsp Salt
  • 360 g Pitted Cherries (fresh or from the jar)
  • a little Powdered Sugar

Here’s how to do it

  • First, put the sugar and eggs in a bowl and beat them until fluffy.
  • Gradually add the following ingredients. Stir well.
    (1) Oil and zucchini
    (2) Flour, baking powder, and hazelnuts
    (3) Cocoa and salt
  • Finally, add the cherries and fold them in.
  • Put the dough into a greased cake pan and bake it for about 30 minutes at 170 °C.
  • Take the cake out of the pan and let it cool down.
  • If you like, sprinkle some powdered sugar on top.
