Gluten Free Almond Bites
This weekend we had visitors and needed something to go with the coffee. These gluten free almond bites were just right – they are slightly smaller than the originals from the bakery and are therefore great as a snack in between.– Pauline

You need
- For the dough:
- 200 g Ground Almonds
- 200 g Gluten-free Flour
- 150 g Sugar
- 2 Pck. Vanilla Sugar
- 1 TSP Baking Powder
- 200 ml Soy Milk
- For the topping:
- 150 g Seaberry Jam
- 150 g Almond Slices
- 4 TBSP Honey
- 3 TSP Nut Butter
- To garnish:
- White Chocolate
- 2 TSP Coconut Butter
Here’s how to do it
- Preheat the oven to 200°C . While the oven is heating, mix all the ingredients for the dough in a large bowl.
- Line a baking tray with baking paper and spread the mixture on it. Now put it in the oven for about 10 minutes. Then take the tray out again and spread the jam on it.
- In another bowl, mix the ingredients for the topping and spread it in crumbles on the jam. Then bake for another 10 minutes.
- When the tray is cool, you can cut the bites. Put the chocolate and coconut butter in a small bowl in the microwave for one minute and spread over the bites with a spoon. Now let it cool down – done!:)
