Healthy Bienenstich
As a child, one of my favorite cakes was the Bienenstich. Recently, I saw a recipe on Instagram that was supposed to be a healthy alternative to it. I modified the ingredients to match what I had at home, and here it is, my very own variation.-Natascha

You need
Dough
- 1/2 Cup Almond Flour
- 1 TBSP Baking Powder
- 3 g Monkfruit Sweetener
- 1 Egg
- 1/4 Cup Almond Milk
Yogurt Mixture
- 3/4 Cup Plain Yogurt
- 3/4 Cup Almond Milk
- 25 g Vanilla Protein Powder
- 3 g Monkfruit Sweetener
Almond Topping
- 30 g Almonds
- 3 g Monkfruit Sweetener
Here’s how to do it
- Put the ingredients for the dough in a bowl and mix well. Pour into a baking pan and bake at 180°C for about 20 minutes and then let cool well.
- Meanwhile, make the yogurt mixture and spread it on the cooled dough. Let rest in the fridge for at least an hour.
- Finally, chop the almonds and toast them in a pan with the monk fruit sweetener. Put them on the cake as a topping. Done!
