Lemon Cake Bites

These lemon cake bites are perfect to bring to a party, because they look super nice and are really tasty. Easy to prepare and a promised success even for baking beginners. My personal highlight is the cream cheese, but especially at hot temperatures it should not be stored for too long.

You need

  • 300 g Butter
  • 300 g Sugar
  • 1 Pck. Vanilla Extract
  • 3 Lemon Zests
  • 6 Eggs
  • 350 g Flour
  • 1 TBSP Baking Powder
  • 400 g Cream Cheese
  • 100 ml Whipped Cream
  • 200 g Powdered Sugar
  • Smarties or Sprinkles optional

Here’s how to do it

  • Mix butter, sugar, vanilla extract and zest of of 2 (!) lemons and beat until fluffy. Add the eggs. Next, mix flour and baking powder in a separate bowl and also stir into the butter mixture.
  • Spread the dough evenly on a baking tray lined with baking paper and bake in a preheated oven at 180° C for 25 minutes. Allow to cool completely after baking.
  • For the topping mix cream cheese and whipped cream. Add the powdered sugar and lemon zest and mix everything until creamy.
  • Finally, spread the cream cheese mixture over your base and decorate with smarties or sprinkles. Cut in small pieces.
