Medieval Flatbread

Today I have one more flatbread recipe for you. This time with a more rustic dough, which I like even better than the classic version. Enjoy!

You need
 

  • 20 g Yeast
  • 140 ml Water
  • 150 g Spelt Flour 630
  • 75 g Rye Flour 1150
  • 1 Pinch of Sugar
  • 1 TSP Salz
  • 200 g Crème fraîche
  • 150 g Bacon
  • 5 Scallions
  • Salt, Pepper

Here’s how to do it

  • First, prepare the dough. To do this, dissolve the yeast with a pinch of sugar in the water. Then you add the flour and 1 teaspoon of salt and knead everything into a nice dough. Now let this dough rise for at least 1-2 hours.
  • Preheat the oven to 250 °C.
  • Divide the dough into 4 equal pieces and roll them out on a baking tray lined with baking paper.
  • Then put the crème fraîche in a bowl, season with salt and pepper and stir until smooth.
  • Lastly wash the scallions and cut into small rings.
  • Once this is done, you can put everything on the dough, starting with the crème fraîche. Spread it evenly and make sure that you spread it to the edge. Then add the bacon cubes, followed by the scallions.
  • And now your flatbread can go into the oven for about 20-30 minutes. Make sure to keep an eye on them so they don’t burn.
  • Enjoy.
