Mediterranean Bread
Where are the panini fans out there? I love them, but I don’t have a panini maker – which is definitely a must have for a good panini. Looking for alternatives, I came up with the following recipe and at least the grilled veggies and cheese give you slightly the same feeling.

You need
- 2 Slices of Bread e.g. rye bread
- 1 TBSP Green Pesto alternatively you can use hummus or another kind of spread
- 1/4 Zucchini
- 1/2 Smoked Bell Pepper in Oil
- 1 Slice of Cheese e.g. Pepperjack
- Arugula
- 1 TSP Balsamic Glaze
- Salt
- Pepper
Here’s how to do it
- Preheat the oven to 180°C.
- Put your bread on a baking tray and spread the pesto on top.
- In the meantime, slice the zucchini and grill them briefly in a pan with a little oil until they are lightly browned.
- Season with salt and pepper.
- Put the zucchini on your bread, then the pickled bell peppers.
- Finally place the cheese on top and bake for about 10 minutes until the cheese has melted and has a light golden brown color.
- To serve, wash the arugula and put it on top, garnish with balsamic glaze.
