Mole Cake for Two

This mole cake is ideal for a small family. I am always annoyed, when a cake is not worth baking it, because the portion is completely oversized for two persons and you can’t really recalculate the quantities. Especially, if (as with this cake) you can’t freeze it, because it has a cream filling and should be eaten at the next day at latest. Here’s one of my favorite cake recipes that makes a cake for two.

You need
 

  • 85 g Butter
  • 80 g Sugar
  • 2 Eggs
  • 3 TBSP Milk
  • 100 g Flour
  • 2 TSP Baking Powder
  • 2 TBSP Cocoa Powder
  • 40 g Dark Chocolate Drops
  • 1 Pinch Salt
  • 2-3 Small Bananas
  • 50 g Chocolate Drops
  • 400 g Whipped Cream
  • 2 TSP Vanilla Extract

Here’s how to do it

  • Preheat the oven to 180°C. Grease the springform pan with butter or oil.
  • Mix butter and sugar well for the dough; then add the eggs. Stir together with the milk until creamy.
  • Mix flour, baking powder and cocoa powder in a separate bowl.
  • Bring both mixtures together.
  • Carefully stir in the chocolate drops.
  • Now, pour the dough into your springform pan and bake for about 25 minutes.
  • Let the cake cool down after taking it out of the oven.
  • Next, carefully hollow out the “mound” with a teaspoon, leaving a rim of 2-3 cm. Collect the cake crumbs in a separate container, we still need them!
  • Cut the bananas in half and lay them out on the bottom.
  • For the filling, whip the cream with the vanilla extract until stiff and carefully add the chocolate drops. Then spread the bananas with the mixture, so that a mound is formed.
  • Finally, crumble the collected dough residues well and press them carefully onto the mound of the cream.
  • Ready!
