Mushroom Pesto
A delicious mushroom pesto pounded with my mortar, which, in addition to the conventional use as a pasta sauce, is a great spread for bread or can even be used as a mushroom filling. You can use different kinds of mushrooms up to your taste.-Josefine
You need
- 6 Mushrooms large
- 1/2 Block Feta Cheese
- 2 Hands full Walnuts
- 10 Fresh Basil Leaves
- Chives
- Salt, Pepper
- Olive Oil
Here’s how to do it
- Clean the mushrooms thoroughly. Then remove the stems and pound in a mortar. If the pesto is to be used as a mushroom filling, set the mushroom heads aside.
- Crumble the feta and add to the mushroom mixture together with the walnuts and mash. Add basil leaves and some chives and mash everything together to a creamy mass. If necessary, add a little olive oil.
- Finally, season with salt and pepper to taste. Done!
