Pear Muffins with Curd Cheese

Currently, I am very passionate about pears: juicy, fruity and easy to process. Today I have this delicious fall fruit lightly braised in a curd cheese muffin and refined with a bit of vanilla. Are you also a pear fan? Then try out the pear muffins right away. Enjoy!

You need

  • 50 g Butter
  • 1 Pear
  • 1 TBSP Vanilla Extract
  • 1 Vanilla Bean
  • 250 g Low Fat Curd Cheese
  • 150 g Sugar
  • 2 Eggs
  • 1 TSP Olive Oil
  • 270 g Flour
  • 1 TSP Baking Powder

Here’s how to do it

  • Peel the pear and cut into small pieces. Heat butter in a pot and stew pear pieces together with vanilla extract for about 10 minutes. Then allow to cool completely.
  • Mix low-fat curd cheese, sugar, olive oil, scraped vanilla bean and eggs until creamy. Gradually add the flour and baking powder. Finally, stir in the cooled butter mixture.
  • Preheat oven to 200°C. Prepare muffin tin with 12 cups. Now divide the dough evenly among the muffin tins and bake for about 20 minutes. Let cool completely.
  • Done.
