You need
 

  • 6 Slices White Bread
  • 450 g Mushrooms
  • 1 Zucchini
  • 2 Bell Peppers
  • 4 TBSP Ricotta
  • 2 TBSP Tomato Paste
  • Scallions
  • 50 ml Crushed Tomatoes
  • 75 g Shredded Mozzarella
  • 2 Cloves Garlic
  • Salt
  • Pepper
  • Paprika
  • Oregano
  • Basil

Here’s how to do it

  • First, fry the scallions in some oil. Add the tomato paste and the crushed tomatoes and let simmer.
  • In the meantime, chop the mushrooms, zucchini and bell peppers and place them in a large bowl. Add the tomato mixture, ricotta and mozzarella.
  • Lastly, add in your garlic.
  • Lay out the bread slices on a baking tray, spread with the mixture and then bake in the oven at 200°C for about 15 minutes.
