You need
- 6 Slices White Bread
- 450 g Mushrooms
- 1 Zucchini
- 2 Bell Peppers
- 4 TBSP Ricotta
- 2 TBSP Tomato Paste
- Scallions
- 50 ml Crushed Tomatoes
- 75 g Shredded Mozzarella
- 2 Cloves Garlic
- Salt
- Pepper
- Paprika
- Oregano
- Basil
Here’s how to do it
- First, fry the scallions in some oil. Add the tomato paste and the crushed tomatoes and let simmer.
- In the meantime, chop the mushrooms, zucchini and bell peppers and place them in a large bowl. Add the tomato mixture, ricotta and mozzarella.
- Lastly, add in your garlic.
- Lay out the bread slices on a baking tray, spread with the mixture and then bake in the oven at 200°C for about 15 minutes.
