Pork Strips with Chanterelles

Another one of my favorite dishes: pork strips with chanterelles and white wine.

You need
 

  • 400 g Pork
  • 155 g Chanterelles
  • 1 Onion
  • 220 g Linguine
  • Vegetable Oil
  • 100 ml Dry White Wine
  • 125 ml Vegetable Broth
  • 100 g Crème Fraîche
  • Green Onions
  • Spices: Salt Pepper, Paprika (sweet & spicy)

Here’s how to do it

  • First, wash the meat and cut it into fine strips. Clean the chanterelles thoroughly, if necessary wash, dry and cut them into bite-sized pieces. Peel and cut the onion into fine slices.
  • Cook the pasta according to package instructions.
  • Now heat some oil in a pan to fry the meat in. Then season it with salt, bell pepper and paprika and put it aside.
  • Again, heat some oil in the pan and fry the chanterelles and onion in it, then deglaze with white wine and let it boil briefly. Now add the broth, stir in the crème fraîche and let it boil over high heat for about 3 minutes until creamy.
  • Then add the meat back into the pan, reduce the temperature and let it finish cooking for about 2 minutes.
  • Season with salt and pepper. Chop the green onions and add.
  • Mix with the pasta and enjoy!
