Quinoa has become a real superfood over the last few years and is used in many healthy recipes. Not surprising, quinoa is versatile, tastes great and is also full of important fiber. It has also moved into my kitchen a long time ago is made into diverse dishes. One of my favorite recipes are these quinoa balls with spinach and feta cheese – usually combined with oven vegetables and homemade tzatziki. Be sure to give it a try!

You need
 

  • 1 Cup Quinoa
  • 100 g Feta
  • 300 g Fresh Spinach
  • 1/2 Cup Breadcrumbs
  • 2 TBSP Tomato Paste
  • 1 Clove Garlic
  • 1 Egg

Here’s how to do it

  • First, cook the quinoa according to packaging instructions and let cool for a few minutes.
  • In the meantime, steam the spinach and chop it into small pieces.
  • In a bowl, mix the quinoa with the spinach and the remaining ingredients and knead into a sticky dough.
  • Form small balls from the dough and finally fry them in a hot skillet for just a few minutes on each side.
