Rice with Tzatziki and Roasted Vegetables
Today I had a very high class dinner aka rice "from yesterday" ;-)) combined with tzatziki and some oven roasted vegetables. The tzatziki was without garlic, but this can of course, depending on taste, be adjusted.-Josefine
- 250 g Rice
- 1/2 Cucumber
- 250 g Custard
- 100 g Crème Fraîche
- Olive oil
- 1 Eggplant
- 1 Zucchini
- 2 Bell Peppers
- 5 Mushrooms
Here’s how to do it
- Cook rice according to package directions.
- For the tzatziki, finely chop the cucumber and mix with custard, crème fraîche, salt, pepper and olive oil.
- Cut the vegetables and mushrooms into pieces or slices as desired and then bake on a baking sheet, about 25 minutes at 180 °C.
- Finally, arrange the rice on a plate with some tzatziki and top with the oven vegetables. Done!
