Rice with Tzatziki and Roasted Vegetables

Today I had a very high class dinner aka rice "from yesterday" ;-)) combined with tzatziki and some oven roasted vegetables. The tzatziki was without garlic, but this can of course, depending on taste, be adjusted.

You need
 

  • 250 g Rice
  • 1/2 Cucumber
  • 250 g Custard
  • 100 g Crème Fraîche
  • Salt
  • Pepper
  • Olive oil
  • 1 Eggplant
  • 1 Zucchini
  • 2 Bell Peppers
  • 5 Mushrooms

Here’s how to do it

  • Cook rice according to package directions.
  • For the tzatziki, finely chop the cucumber and mix with custard, crème fraîche, salt, pepper and olive oil.
  • Cut the vegetables and mushrooms into pieces or slices as desired and then bake on a baking sheet, about 25 minutes at 180 °C.
  • Finally, arrange the rice on a plate with some tzatziki and top with the oven vegetables. Done!
