Spinach-Feta-Quiche with Salmon and Scallions
The combination of salmon, spinach and feta is quite popular and I also just love this delicious taste. Served as quiche it takes a while in the oven, but it’s worth it! -Natascha

You need
- 200 g Flour
- 100 g Margarine
- 4 Eggs
- 250 g Frozen Spinach
- 100 g Feta
- 4 TBSP Cream Cheese
- Scallions
- 300 g Salmon
- Salt, Pepper
- Lemon
Here’s how to do it
- Preheat the oven to 180°C.
- Place the salmon in an oven safe dish, season with salt, pepper and lemon and cook in the oven for about 30 minutes.
- Now we prepare the dough for the quiche. To do this, knead the flour, one egg and the margarine in a bowl until you have a slightly sticky mass.
- Grease a baking dish with some margarine and spread the dough evenly on the bottom and on the sides. Press down well. Cover with some baking paper, put a smaller bowl on top and pre-bake it in the oven for about 10-15 minutes.
- In the meantime, prepare the filling. Beat the remaining 3 eggs, season with salt and pepper and mix with the cream cheese until smooth. Cook the spinach and fold into the egg / cream cheese mixture together with the feta and scallions.
- Remove the salmon from the oven, cut into small cubes and add to the egg mixture as well.
- Finally, spread the egg mixture on the pre-baked dough and bake everything again in the oven for about 30-40 minutes.
