Vegetarian Mushroom Stir Fry
I actually wanted to try this recipe with my new sous vide cooker. Due to lack of time, I opted for the quick version in the pan and definitely didn’t regret it! Bon appetit 🙂

You need
- 12 Mushrooms
- 1 Red Onion
- 2 Eggs
- 1 TBSP Olive Oil
- 150 g Feta
- 1/2 Cup Crème Fraîche
- Salt, Pepper, Parsley
Here’s how to do it
- First, clean the mushrooms and cut them into thin slices. Then put some oil in a pan and let the mushrooms stew.
- Now cut an onion (I always like to use red onions) into pieces and add to the mushrooms.
- In the meantime, beat 2 eggs in a separate bowl. Also, add a tablespoon of olive oil and some salt and pepper.
- Now add the egg mixture and half cup of crème fraîche to the stewed mushrooms and mix well.
- Now the feta is coarsely crumbled and stirred in.
- Finally, season the mushrooms with salt, pepper and some parsley and then serve warm. Ready 🙂
