Wild Caught Salmon with Tomatoes, Rice & Broccoli

We should definitely eat more fish. It contains many healthy nutrients and is essential for a balanced diet. So today I had wild caught salmon on tomato rice with broccoli, baked in a casserole dish. Here’s how you make it.

You need

  • 1 1/2 Cups Rice
  • 3 Cups Water
  • 4 Salmon Fillets
  • 1 Glass Dried Tomatoes
  • 3 TBSP Tomato Paste
  • 1 Red Onion
  • 300 g Broccoli
  • 100 g Whipping Cream
  • 100 ml Milk
  • Salt, Pepper
  • Lemon

Here’s how to do it

  • Heat 2 cups of water with plenty of salt. When the water boils, add rice and simmer. In the meantime, cut dried tomatoes into small pieces. Mix rice, tomatoes and tomato paste in a bowl and place in a baking dish.
  • Cut onion into rings and sauté. Season the salmon well with salt and pepper and fry. Deglaze with cream and season with lemon, salt and pepper. Put everything on top of the rice layer.
  • Finally, heat the broccoli in a saucepan and put it on the fish as well. Pour milk over the casserole and season again. Bake at 180°C for about 25 minutes. Done!
