with chocolate drops

I have to admit that I’m really into using pomegranate seeds in all kinds of food at the moment. This time, I made a chocolaty-fruity dessert, a recipe that yields for two large or three smaller servings. What’s especially handy about this recipe is that you don’t have to fuss with separating the seeds from the juice, since we are using the juice as well. If the dessert is for adults only, you can top it off with a little twist, for example a shot of cassis liqueur. 🙂

You need:
- 250 g Low Fat Curd Cheese
- 1 Pomegranate
- 100 g Plain Yogurt
- 50 ml Whipped Cream
- 20 g Sugar
- 1 TBSP Vanilla Extract
- Chocolate Drops
- Mint
Here’s how to do it:
Put the low-fat curd cheese in a large bowl. Carefully cut the pomegranate in half and add the seeds along with the juice to the curd. Some seeds should be set aside for decoration.
Now add natural yogurt and whipped cream and stir well. Mix in in vanilla extract and sugar. Stir until a creamy mass is formed. Refine with mint and season well.
Finally, pour into two or three glasses and garnish with the remaining pomegranate seeds and some mint. In addition, I have sprinkled some chocolate drops on top of my version.
